- Preheat the oven to 400°F (200°C).
- Combine honey, olive oil, salt, pepper, and thyme (if using) in a large bowl. Whisk these ingredients together until well mixed.
- Add carrots and beets to the bowl; toss gently to coat them evenly.
- Spread the mixture on a parchment-lined baking sheet in a single layer.
- Roast for 30-35 minutes, stirring halfway through, until tender and slightly caramelized.
- Serve warm, drizzling any leftover honey mixture on top.
