Preparation
- Preheat the oven to 425°F (220°C).
- Prick each potato several times with a fork to allow steam to escape.
- Rub the potatoes with olive oil and sprinkle with salt.
Baking
- Place the potatoes directly on the oven rack or on a baking sheet.
- Bake for 45-60 minutes, or until the potatoes are tender and the skin is crispy.
- Remove from the oven and let cool for a few minutes.
Serving
- Cut a slit in the top of each potato and gently squeeze the ends to open.
- Add butter, sour cream, cheese, chives, salt, and pepper as desired.
