Ingredients
  

Potatoes
  • 4 medium russet potatoes cleaned and scrubbed
Toppings
  • 4 tablespoons butter optional
  • 1 cup sour cream optional
  • 1 cup shredded cheese optional
  • 1 cup chives chopped, optional
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Prick each potato several times with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil and sprinkle with salt.
Baking
  1. Place the potatoes directly on the oven rack or on a baking sheet.
  2. Bake for 45-60 minutes, or until the potatoes are tender and the skin is crispy.
  3. Remove from the oven and let cool for a few minutes.
Serving
  1. Cut a slit in the top of each potato and gently squeeze the ends to open.
  2. Add butter, sour cream, cheese, chives, salt, and pepper as desired.

Notes

For extra crispy skin, you can bake the potatoes without wrapping them in foil. Adjust baking time based on the size of the potatoes.
