Ingredients

  • 2 cups fresh spinach, chopped Use baby spinach for a milder flavor and tender texture.
  • 1 cup crumbled feta cheese Opt for quality feta for a richer taste; goat cheese can be a tasty substitute!
  • 4 whole wheat pitas Look for soft pitas to make filling easier; gluten-free options are available too.
  • 2 tbsp lemon juice, freshly squeezed Adds a zesty brightness; bottled lemon juice works in a pinch!
  • 2 cloves garlic, minced Fresh garlic enhances the aroma; garlic powder may be used in a hurry.
  • 1 tbsp olive oil Extra virgin olive oil brings depth; avocado oil is a great alternative for a lighter flavor.

Equipment

  • Oven
  • Baking Sheet
  • mixing bowl
  • skillet

Method

  1. Preheat your oven to 350°F (175°C). This ensures the pitas warm up perfectly, turning them slightly crispy while keeping the insides deliciously soft.
  2. Sauté minced garlic in olive oil over medium heat. Cook for about 30 seconds until fragrant, then add in the chopped spinach. Stir and cook for around 3 minutes until the spinach is wilted and vibrant green.
  3. Combine the sautéed spinach with crumbled feta cheese and freshly squeezed lemon juice in a bowl. Mix well until everything is nicely blended, creating a creamy, tangy filling.
  4. Cut each pita in half to create pockets. Generously fill each pocket with the spinach-feta mixture, ensuring it's packed with flavor.
  5. Place the filled pitas on a baking sheet lined with parchment paper. Bake for about 10 minutes until they are warm and slightly crispy around the edges.
  6. Serve your delightful pitas with a drizzle of extra lemon juice or tzatziki sauce for dipping. Enjoy the burst of flavors with each bite!
