- Preheat your oven to 350°F (175°C). This ensures the pitas warm up perfectly, turning them slightly crispy while keeping the insides deliciously soft.
- Sauté minced garlic in olive oil over medium heat. Cook for about 30 seconds until fragrant, then add in the chopped spinach. Stir and cook for around 3 minutes until the spinach is wilted and vibrant green.
- Combine the sautéed spinach with crumbled feta cheese and freshly squeezed lemon juice in a bowl. Mix well until everything is nicely blended, creating a creamy, tangy filling.
- Cut each pita in half to create pockets. Generously fill each pocket with the spinach-feta mixture, ensuring it's packed with flavor.
- Place the filled pitas on a baking sheet lined with parchment paper. Bake for about 10 minutes until they are warm and slightly crispy around the edges.
- Serve your delightful pitas with a drizzle of extra lemon juice or tzatziki sauce for dipping. Enjoy the burst of flavors with each bite!
