Ingredients
  

Egg Mixture
  • 8 large eggs beaten
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 1 cup bell peppers diced
  • 1 cup spinach fresh, chopped
  • 1 cup onion diced
  • 1 cup zucchini diced
Cheese
  • 1 cup cheddar cheese shredded
  • 1 cup feta cheese crumbled
Herbs
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh basil chopped

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. In a skillet over medium heat, sauté the onions and bell peppers until softened, about 5 minutes.
  4. Add the zucchini and spinach, cooking until the spinach is wilted, about 2-3 minutes.
  5. Pour the egg mixture over the sautéed vegetables and cook for 2-3 minutes without stirring, until the edges begin to set.
Cooking
  1. Sprinkle the cheddar and feta cheese evenly over the top.
  2. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  3. Remove from the oven and let cool for a few minutes before slicing.
  4. Garnish with fresh parsley and basil before serving.
