  • 3 cloves Fresh Garlic Chopped
  • 1 cup Sun-Dried Tomatoes Packed in oil
  • 2 cups Fresh Spinach
  • 1 cup Heavy Cream Full-fat
  • 1 cup Parmesan Cheese Freshly grated
  • 8 ounces Pasta of Choice Fettuccine or penne recommended
  • 2 tablespoons Olive Oil Extra virgin
  • 1 teaspoon Italian Seasoning
  • to taste Salt and Pepper

Method
 

Prep the Ingredients
  1. Gather all your ingredients: boneless chicken breasts, sun-dried tomatoes, fresh spinach, garlic, heavy cream, and Parmesan cheese. Chop the garlic and slice the sun-dried tomatoes. Cook your pasta according to package instructions until al dente, about 10 minutes.
Cook the Chicken
  1. Heat a large skillet over medium-high heat and add olive oil. Place the seasoned chicken breasts into the pan and cook each side for about 6-7 minutes until they reach an internal temperature of 165°F. Remove the chicken and let it rest.
Create the Creamy Sauce
  1. In the same skillet, lower the heat slightly and add more olive oil.
