Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken thighs cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
Peanut Sauce
  • 1 cup creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 clove garlic minced
  • 1 cup coconut milk or water for thinning
  • 1 tsp red pepper flakes optional for heat
Garnish
  • 1 tbsp chopped cilantro for garnish
  • 1 tbsp chopped peanuts for garnish

Method
 

Marinate Chicken
  1. In a mixing bowl, combine soy sauce, brown sugar, lime juice, vegetable oil, garlic, and ginger. Add chicken strips and marinate for at least 15 minutes.
Prepare Peanut Sauce
  1. In another bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, garlic, and coconut milk until smooth. Adjust consistency with more coconut milk if needed. Stir in red pepper flakes if using.
Grill Chicken
  1. Preheat the grill to medium-high heat. Thread marinated chicken onto skewers. Grill for about 5-7 minutes on each side, or until cooked through and slightly charred.
Serve
  1. Serve grilled chicken skewers with peanut sauce on the side. Garnish with chopped cilantro and peanuts.

Notes

For best results, soak wooden skewers in water for 30 minutes before grilling to prevent burning.
