Marinate Chicken
- In a mixing bowl, combine soy sauce, brown sugar, lime juice, vegetable oil, garlic, and ginger. Add chicken strips and marinate for at least 15 minutes.
Prepare Peanut Sauce
- In another bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, garlic, and coconut milk until smooth. Adjust consistency with more coconut milk if needed. Stir in red pepper flakes if using.
Grill Chicken
- Preheat the grill to medium-high heat. Thread marinated chicken onto skewers. Grill for about 5-7 minutes on each side, or until cooked through and slightly charred.
Serve
- Serve grilled chicken skewers with peanut sauce on the side. Garnish with chopped cilantro and peanuts.
