Prepare Chicken Salad
- In a mixing bowl, combine shredded chicken, mayonnaise, Dijon mustard, diced celery, halved grapes, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly coated.
Assemble Sandwich
- Slice the croissants in half horizontally. Place a leaf of romaine lettuce on the bottom half of each croissant.
- Spoon a generous amount of chicken salad onto the lettuce, then top with the other half of the croissant.
