Ingredients
  

Meatballs
  • 1 pound ground chicken
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1 large egg beaten
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sauce
  • 1 cup chicken broth
  • 1 lemon juice freshly squeezed
  • 2 tablespoons capers drained
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Bake in the preheated oven for 20 minutes or until cooked through, reaching an internal temperature of 165°F (74°C).
Make Sauce
  1. In a skillet over medium heat, melt the butter. Add the chicken broth, lemon juice, and capers. Bring to a simmer.
  2. Once the meatballs are done, add them to the skillet and gently toss to coat in the sauce. Cook for an additional 5 minutes.
  3. Garnish with fresh parsley before serving.
