Prepare Meatballs
- Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
- Bake in the preheated oven for 20 minutes or until cooked through, reaching an internal temperature of 165°F (74°C).
Make Sauce
- In a skillet over medium heat, melt the butter. Add the chicken broth, lemon juice, and capers. Bring to a simmer.
- Once the meatballs are done, add them to the skillet and gently toss to coat in the sauce. Cook for an additional 5 minutes.
- Garnish with fresh parsley before serving.
