Ingredients
  

For the Chicken
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Mac and Cheese
  • 8 ounces elbow macaroni Uncooked.
  • 2 tablespoons butter For the sauce.
  • 2 tablespoons all-purpose flour For thickening.
  • 2 cups milk Whole milk recommended.
  • 2 cups cheddar cheese, shredded Use sharp cheddar for more flavor.
  • 1 cup mozzarella cheese, shredded For creaminess.
  • 1 teaspoon mustard powder Optional, for flavor.

Method
 

Prepare the Chicken
  1. In a skillet, combine shredded chicken with garlic powder, paprika, salt, and black pepper. Cook over medium heat until heated through, about 5 minutes.
Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
  1. In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, stirring constantly until the mixture thickens, about 5 minutes.
  2. Remove from heat and stir in cheddar and mozzarella cheeses until melted and smooth. Add mustard powder if using.
Combine and Bake
  1. Add the cooked macaroni to the cheese sauce and stir to combine. Transfer to a baking dish and top with the seasoned chicken.
  2. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden on top.
