Ingredients
  

Marinade
  • 1 cup plain yogurt for marinating
  • 2 tablespoons olive oil for flavor
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 teaspoon paprika for color and flavor
  • 1 teaspoon cumin for warmth
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Chicken
  • 1.5 pounds boneless chicken thighs cut into cubes
Vegetables (optional)
  • 1 bell pepper red cut into squares
  • 1 bell pepper green cut into squares
  • 1 onion red cut into squares

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine yogurt, olive oil, lemon juice, garlic, paprika, cumin, salt, and black pepper. Whisk until smooth.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  2. Remove from the grill and let rest for a few minutes before serving.
