Ingredients
  

Noodles
  • 4 cups broccoli stems spiralized
  • 1 cup carrots spiralized
Dressing
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon sesame seeds toasted
  • 1 teaspoon honey or maple syrup for vegan
  • 1 clove garlic minced
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon cilantro chopped

Method
 

Prepare the Noodles
  1. Spiralize the broccoli stems and carrots using a spiralizer. Set aside.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, sesame oil, rice vinegar, grated ginger, honey, and minced garlic until well combined.
Combine and Serve
  1. In a large serving bowl, combine the spiralized broccoli stems and carrots. Pour the dressing over the noodles and toss to coat evenly.
  2. Garnish with sliced green onions and chopped cilantro before serving.
