  • 1 can Canned Black Beans Rinse and drain for best texture.
  • 1 cup Sweet Corn Fresh or frozen works well.
  • 1 medium Red Bell Pepper Diced.
  • 1/2 medium Red Onion Finely chopped.
  • 1/4 cup Fresh Cilantro Chopped.
  • 2 tablespoons Lime Juice Freshly squeezed.
  • 2 tablespoons Olive Oil Extra virgin preferred.

Method
 

Preparation
  1. Gather all ingredients on your kitchen counter.
  2. Dice the bell peppers and red onion into small pieces.
  3. Rinse and drain the canned black beans.
  4. In a large mixing bowl, combine the black beans, corn, diced peppers, onions, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and mix gently.
