Instructions
- Preheat oven to 375°F (190°C).
- Sauté fresh spinach in olive oil until wilted, about 3-4 minutes.
- In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, and half the parmesan until smooth.
- Spread marinara sauce in a baking dish. Layer with noodles, half the cheese mixture, and half the spinach. Repeat layers, finishing with noodles and remaining marinara topped with mozzarella.
- Cover with foil and bake for 25 minutes; uncover and bake an additional 15-20 minutes until bubbly and golden.
- Let sit for 10-15 minutes before slicing.
