Instructions
- Peel and cut russet potatoes into even chunks.
- Boil potato chunks in salted water until fork-tender (15-20 minutes).
- Drain and let steam dry for a few minutes.
- Mash potatoes with butter and heavy cream until smooth.
- Stir in cheddar cheese, salt, and pepper until well combined.
- Fold in crumbled bacon and garnish with chives or green onions before serving.
