  • 2 lbs Yukon gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  3. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.

  5. While baking, boil potatoes in salted water until fork-tender (15-20 minutes). Drain and return to pot.
  6. Add butter, garlic, parsley, thyme, salt, and pepper to potatoes; mash until smooth.
  7. For the sauce, simmer beef broth and soy sauce in a saucepan over medium heat until slightly thickened.
