Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one by one, mixing well after each addition.
  3. Sift in the cake flour, baking powder, and salt; mix until just combined.
  4. Gently fold in the chopped strawberries until evenly distributed.
  5. Pour the batter into prepared pans and bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
  6. While cakes cool, whip heavy cream until soft peaks form, then gradually add powdered sugar and vanilla extract to achieve a smooth frosting.
  7. Once completely cooled, stack the cakes with frosting in between and generously frost the top and sides.
