Instructions
- Preheat your oven to 350°F (175°C) and grease two round cake pans.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one by one, mixing well after each addition.
- Sift in the cake flour, baking powder, and salt; mix until just combined.
- Gently fold in the chopped strawberries until evenly distributed.
- Pour the batter into prepared pans and bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
- While cakes cool, whip heavy cream until soft peaks form, then gradually add powdered sugar and vanilla extract to achieve a smooth frosting.
- Once completely cooled, stack the cakes with frosting in between and generously frost the top and sides.
