Ingredients

Scale
  • 4 cups diced russet potatoes (about 4 medium potatoes)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 strips bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced for garnish

Instructions

  1. Wash and peel the potatoes; cut them into bite-sized cubes. Dice the onion and mince the garlic.
  2. In a skillet over medium heat, cook the bacon until crispy. Remove bacon and sauté onions in the drippings until translucent. Add minced garlic and cook until fragrant.
  3. Place chopped potatoes in the Crock Pot along with sautéed onions and garlic. Pour chicken broth over the top until everything is just covered.
  4. Cover and set on low heat for about 6 hours or high heat for 3 hours.
  5. Once cooked, mash some potatoes against the side of the pot for thickness. Stir in heavy cream slowly until well incorporated.
  6. Ladle into bowls and top with crispy bacon bits, shredded cheddar cheese, and freshly chopped green onions.
