  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1 medium onion, chopped
  • 2 cups fresh spinach or kale (optional)

  • 2 tbsp olive oil

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, basil, garlic, salt, and pepper until combined. Form into meatballs.

  5. Return meatballs to the pot and simmer on low for 20 minutes. Stir in heavy cream before serving.
