  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh dill, chopped
  • 1 red onion, finely chopped

  • 3 tbsp freshly squeezed lemon juice
  • Salt & pepper to taste

Instructions

  1. Wash the baby potatoes under cold water and cut any large ones in half for even cooking.
  2. Boil the potatoes in salted water over medium-high heat until fork-tender (about 15-20 minutes). Drain and let cool slightly.
  3. While cooling, whisk together olive oil, lemon juice, salt, and pepper in a bowl.
  4. Stir in chopped parsley, dill, and red onion into the dressing.
  5. Toss the cooled potatoes with the herb dressing until well-coated.
  6. Cover and chill in the refrigerator for at least one hour before serving.
