- 2 lbs baby potatoes
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
- 1 red onion, finely chopped
- 1/2 cup extra virgin olive oil
- 3 tbsp freshly squeezed lemon juice
- Salt & pepper to taste
Instructions
- Wash the baby potatoes under cold water and cut any large ones in half for even cooking.
- Boil the potatoes in salted water over medium-high heat until fork-tender (about 15-20 minutes). Drain and let cool slightly.
- While cooling, whisk together olive oil, lemon juice, salt, and pepper in a bowl.
- Stir in chopped parsley, dill, and red onion into the dressing.
- Toss the cooled potatoes with the herb dressing until well-coated.
- Cover and chill in the refrigerator for at least one hour before serving.
