Instructions

  1. Chop mushrooms, bamboo shoots, and green onions. Press tofu to remove excess moisture and cut into cubes.
  2. In a large pot over medium heat, sauté green onions until fragrant (about 1 minute).
  3. Add mushrooms and bamboo shoots; sauté for 3-4 minutes until softened.
  4. Pour in vegetable broth, soy sauce, rice vinegar, chili paste, and tofu cubes. Bring to a gentle simmer while stirring occasionally.
  5. Mix cornstarch with water until smooth; gradually add to the pot while stirring until the soup thickens (about 5 minutes).
