- 3–4 boneless skinless chicken breasts
- 1 ripe mango, diced
- 1 fresh pineapple, diced
- 3–4 garlic cloves, minced
- ¼ cup low-sodium soy sauce
- 2 tablespoons honey
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix soy sauce, honey, minced garlic, lime juice, olive oil, salt, and pepper to create the marinade.
- Place chicken breasts in a resealable bag or bowl and pour half the marinade over them. Let marinate for at least 30 minutes.
- Preheat grill to medium-high heat (400°F).
- Remove chicken from marinade and grill for about 6-7 minutes per side until cooked through (internal temperature should reach 165°F).
- Add diced mango and pineapple to the grill during the last few minutes to caramelize.
- Drizzle remaining marinade over grilled chicken and fruit; garnish with fresh cilantro before serving.
