  • 1 cup small tapioca pearls
  • 2 cups fresh strawberries, hulled and sliced
  • 1 can (400ml) full-fat coconut milk
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups filtered water

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of small tapioca pearls and cook for about 15 minutes until translucent.
  2. Remove from heat, drain through a fine mesh sieve, and rinse under cold water.
  3. In another saucepan, combine the can of coconut milk with 1/2 cup of sugar over medium heat until the sugar dissolves.
  4. Stir in the drained tapioca pearls into the warm coconut mixture and allow it to cool slightly.
  5. Slice 2 cups of fresh strawberries; optionally sprinkle with sugar for added sweetness.
  6. In serving bowls, layer the coconut-tapioca mixture with sliced strawberries. Chill in the refrigerator for at least an hour before serving.
