Instructions
- Peel and grate the potatoes, then squeeze out excess moisture.
- In a bowl, combine grated potatoes, finely chopped onion, eggs, flour, salt, and pepper until well mixed.
- Heat 1/4 inch of neutral oil in a skillet over medium-high heat until shimmering.
- Scoop 1/4 cup of the mixture into the hot oil and flatten slightly. Fry for about 3-4 minutes on each side until golden brown.
- Drain on paper towels and serve hot with applesauce or sour cream.
