  • 34 boneless, skinless chicken breasts
  • Fresh cilantro
  • Crispy romaine or butter lettuce
  • 1 red bell pepper
  • 1 large carrot
  • 1 cucumber
  • ½ cup roasted peanuts
  • 2 tbsp sesame oil
  • Juice of 2 limes
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey or agave syrup
  • Chili paste (optional)

Instructions

  1. Cook the chicken by poaching or grilling until fully cooked (15-20 minutes). Let cool before slicing.
  2. While the chicken cools, chop the lettuce, dice the cucumber and bell pepper, and shred the carrot.
  3. In a bowl, whisk together sesame oil, lime juice, soy sauce, honey, and chili paste (if using).
  4. In a large bowl, combine chopped lettuce with all prepared vegetables and sliced chicken.
  5. Drizzle dressing over the salad and toss gently to combine.
  6. Top with roasted peanuts before serving. Enjoy immediately or chill briefly for freshness.
