- 3–4 boneless, skinless chicken breasts
- Fresh cilantro
- Crispy romaine or butter lettuce
- 1 red bell pepper
- 1 large carrot
- 1 cucumber
- ½ cup roasted peanuts
- 2 tbsp sesame oil
- Juice of 2 limes
- 3 tbsp low-sodium soy sauce
- 1 tbsp honey or agave syrup
- Chili paste (optional)
Instructions
- Cook the chicken by poaching or grilling until fully cooked (15-20 minutes). Let cool before slicing.
- While the chicken cools, chop the lettuce, dice the cucumber and bell pepper, and shred the carrot.
- In a bowl, whisk together sesame oil, lime juice, soy sauce, honey, and chili paste (if using).
- In a large bowl, combine chopped lettuce with all prepared vegetables and sliced chicken.
- Drizzle dressing over the salad and toss gently to combine.
- Top with roasted peanuts before serving. Enjoy immediately or chill briefly for freshness.
