Description

Monterey Chicken Orzo is a creamy, comforting dish that features tender chicken, vibrant spinach, and flavorful orzo pasta—perfect for weeknight dinners and family gatherings!

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then cook in the skillet until golden brown, about 6-7 minutes per side. Remove and set aside.
  3. Add garlic and spinach to the skillet; sauté until fragrant and spinach wilts, about 2-3 minutes.
  4. Pour in chicken broth and heavy cream; bring to a simmer and let thicken slightly.
  5. Stir in uncooked orzo and Italian seasoning; cook until orzo is tender, approximately 10-12 minutes.
  6. Mix in Parmesan cheese until melted. Slice cooked chicken and layer on top of the orzo.
