- 3–4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then cook in the skillet until golden brown, about 6-7 minutes per side. Remove and set aside.
- Add garlic and spinach to the skillet; sauté until fragrant and spinach wilts, about 2-3 minutes.
- Pour in chicken broth and heavy cream; bring to a simmer and let thicken slightly.
- Stir in uncooked orzo and Italian seasoning; cook until orzo is tender, approximately 10-12 minutes.
- Mix in Parmesan cheese until melted. Slice cooked chicken and layer on top of the orzo.
