Instructions
- Rinse the rice under cold water until it runs clear to remove excess starch.
- In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook for another minute.
- Stir in cumin and cinnamon, cooking for about 30 seconds until fragrant.
- Add the rinsed rice, stirring to coat with spices. Toast lightly for 2-3 minutes.
- Pour in the broth and season with salt and pepper. Bring to a gentle boil, then reduce heat to low and cover tightly.
- Simmer for 18-20 minutes without lifting the lid. Fluff with a fork and let sit covered for an additional 5 minutes before serving.
