  • 2 lbs Russet or Yukon Gold potatoes
  • 3 large sweet yellow onions
  • 4 tbsp unsalted butter
  • 1 cup Gruyère cheese (shredded)
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Peel and thinly slice the potatoes and onions.
  2. In a skillet over medium heat, melt butter and sauté onions until translucent (about 15 minutes). Add minced garlic during the last 2 minutes.
  3. In a bowl, mix heavy cream with salt, pepper, and thyme.
  4. Grease a baking dish and layer half of the potatoes followed by half of the sautéed onions. Drizzle half of the creamy mixture over the layers, then repeat.
  5. Bake uncovered for 45 minutes until golden brown and bubbly.
