- 2 lbs Russet or Yukon Gold potatoes
- 3 large sweet yellow onions
- 4 tbsp unsalted butter
- 1 cup Gruyère cheese (shredded)
- 1 cup heavy cream
- 2 cloves garlic (minced)
- 1 tsp fresh thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Peel and thinly slice the potatoes and onions.
- In a skillet over medium heat, melt butter and sauté onions until translucent (about 15 minutes). Add minced garlic during the last 2 minutes.
- In a bowl, mix heavy cream with salt, pepper, and thyme.
- Grease a baking dish and layer half of the potatoes followed by half of the sautéed onions. Drizzle half of the creamy mixture over the layers, then repeat.
- Bake uncovered for 45 minutes until golden brown and bubbly.
