Instructions
- Cook rigatoni in salted boiling water until al dente (about 10-12 minutes).
- In a skillet, heat olive oil over medium heat, crumble in the sausage, and cook until browned (5-7 minutes).
- Add minced garlic to the skillet; stir until fragrant (about 1 minute). If using, add spinach and stir until wilted.
- Pour in heavy cream while stirring gently. Allow it to simmer until slightly thickened.
- Drain rigatoni, reserving some pasta water, then combine it with the sauce in the skillet. Adjust consistency with reserved pasta water if needed.
- Stir in freshly grated Parmesan cheese until melted. Serve hot, garnished with extra cheese or herbs if desired.
