Instructions
- Preheat the oven to 400°F (200°C). Wash and pierce the potatoes with a fork.
- Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
- While baking, season chicken breasts with salt and pepper, then cook in a skillet over medium heat for 6-8 minutes per side until no longer pink.
- Shred the cooked chicken in a bowl and stir in ranch seasoning, cream cheese, cheddar cheese, bacon bits, and half of the green onions.
- Once the potatoes are cool, cut them open lengthwise and fluff the insides with a fork. Spoon in the chicken filling generously.
- Top with more cheddar cheese and remaining green onions. Return to the oven for an additional 10-15 minutes until heated through.
