- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic
- 1 cup low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 2 tablespoons capers
- 2 tablespoons olive oil

- Salt and pepper to taste
Instructions
- Pound chicken breasts between plastic wrap until about half an inch thick. Season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove from skillet.
- In the same skillet, sauté minced garlic for 30 seconds. Add chicken broth and lemon juice; stir.
- Mix cornstarch with water; add to the skillet to thicken the sauce. Stir in capers.
- Return the chicken to the skillet and simmer for an additional few minutes until heated through.
- Serve garnished with fresh parsley over pasta or alongside roasted vegetables.
