Instructions

- Sauté chopped broccoli in olive oil over medium heat until bright green and tender, about 5 minutes.
- Mix sautéed broccoli with cream cheese and half of the cheddar cheese until well combined.
- Slice each chicken breast horizontally to create a pocket without cutting all the way through.
- Generously fill each pocket with the broccoli mixture.
- Sear stuffed chicken breasts in an oven-safe skillet over medium-high heat for 3-4 minutes per side until golden brown.
- Transfer to the oven and bake for 20-25 minutes. Add remaining cheddar cheese on top and bake for an additional 5 minutes until melted.
