- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 4 green onions, chopped
- 2 cups kale or cabbage, chopped

Instructions
- Peel and chop the russet potatoes into even chunks; rinse under cold water.
- Boil the potatoes in salted water for 15-20 minutes until fork-tender.
- In a separate pan, sauté the chopped greens and green onions in melted butter until tender.
- Drain the cooked potatoes, return them to the pot, and mix in butter and heavy cream until smooth.
- Gently fold in the sautéed greens; season with salt and pepper to taste.
