  • 8 oz fusilli or penne pasta
  • 8 oz fresh mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook until golden brown and fully cooked (6-7 minutes per side). Remove and slice.
  2. Boil salted water in a pot. Add pasta and cook according to package instructions until al dente. Drain and reserve some pasta water.
  3. In the same skillet, add minced garlic and cherry tomatoes; sauté until tomatoes burst (3-4 minutes).
  4. Lower heat, stir in heavy cream, then add cooked pasta and sliced chicken. Mix well to combine.
  5. Tear fresh mozzarella into chunks; stir until melted. Garnish with fresh basil before serving.
