- 3–4 boneless, skinless chicken breasts
- 8 oz fusilli or penne pasta
- 8 oz fresh mozzarella cheese
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook until golden brown and fully cooked (6-7 minutes per side). Remove and slice.
- Boil salted water in a pot. Add pasta and cook according to package instructions until al dente. Drain and reserve some pasta water.
- In the same skillet, add minced garlic and cherry tomatoes; sauté until tomatoes burst (3-4 minutes).
- Lower heat, stir in heavy cream, then add cooked pasta and sliced chicken. Mix well to combine.
- Tear fresh mozzarella into chunks; stir until melted. Garnish with fresh basil before serving.
